A special card for you this Christmas – this year I decided to do an electronic one.  It was a BIG decision for me for I love designing and making cards, going through my Christmas list, addressing the envelopes ~ even bringing them to the Post Office.  I was disappointed until I started to make this  … it was so much fun. I hope you like it.

And, of course, I am including a recipe as always (at bottom of page).  Betty, if you’ve never made these before, you’re going to love it.  I tried it out and it was SOOOO easy.  (John, you will enjoy the eating – the making not so much. hahaha)

Sure hope you are doing well.  Hard to believe we are already into the Christmas Season. Have a wonderful time with your family.  (We’re hearing about the awful weather you’re having … so good you don’t have to travel in that mess)

It won’t be long before you are back on the Point again.  I’m already looking forward to it.

Curried Chicken Puffs (Christmas 2022)

1/2 cup water
1/3 cup margarine
2/3 cup flour
Dash salt
1 8oz pk cream cheese
1/4 cup milk
1/4 teaspoon salt
1/8 tsp curry powder
Dash pepper
1 1/2 cup cooked chicken
2 tbsp green onions
1/3 cup slivered almonds (optional)

Bring water and margarine to boil; add flour and salt; stir vigorously over low heat until mixture forms ball. Remove from heat, add eggs, one at a time, beating until smooth after each addition (I use hand mixer for this part). Place level tablespoon of batter (I use a cookie scoop) on ungreased cookie sheet. Bake at 400 ̊ for 25 minutes. Cool

Combine cheese, milk, salt, curry and pepper mixing until well blended. Add chicken, almonds and onions; mix lightly. Cut tops from cream puffs, fill with mixture. Replace tops. Bake at 375 for 5 minutes (until warm. Makes 1 ½ dozen.

TIP: Unfilled puffs can be prepared in advance and frozen. Puffs can also be used as a pastry with whipped cream or preserves as filling. Dust top with icing sugar

  1. Great. This is the new way of doing things and all is realistic. The house decorations fit the scene. We are doing well, having our Christmas meal and gift opening with Oakley today, Craig has to work this PM and next two nights. All the Best to all and Tks.
