Will it be a green or a white one?  It’s anybody’s guess at this point but with any luck there’ll be a snowfall before Christmas Eve, at least enough to make it look and feel like Christmas.   UPDATE:  Be careful what you wish for!  There was snow overnight and the heaviest kind because it also rained.  And now the wind is wicked. It is a northeast wind with huge white caps on the river and there’s drifiting snow. The forecast says more snow throughout the day.  Oh my, but all I can do is laugh.  I have buckets of water just in case the power goes out and my camp stove is ready.  I’ve decided I’ll just stay inside and be in my happy place.

The evening was closing in as I was making your Christmas card and I was able to capture a bit of the atmosphere inside my little gingerbread house. Everything is so cozy, quiet and peaceful.  Wouldn’t it be great if you could come sit a while.  The kettle is on and there’s a slice of homemade bread waiting for you.

I can imagine it’s not nearly as quiet at your place as it is at mine.  Ah but enjoy every moment! Childhood is way too short and goes way to fast to do otherwise.   Give Nolan and Carter a great BIG hug especially from Auntie BoBo

Pepper Steak (Christmas 2023)

Ingredients

1½ lbs beef slivers

Marinade
3 tbsp soy sauce
2 tbsp cooking oil
1/4 tsp ginger
1 tsp salt & pepper

Vegetables
1 green pepper 
1 sm red and yellow pepper
1 lg onion 
2 carrots (julienne cut)
2 cups mushrooms

Gravy
Reserved marinade
1 cup beef broth
1 tbsp cornstarch

1 tomato (cut in wedges)

Combine ingredients for the marinade;  add beef slivers, mixing thoroughly to ensure all pieces are coated.  Marinade for several hours stirring occasionally.

Drain beef, reserving marinade. In wok or skillet, stir fry beef (about 3 to 4 minutes); remove from pan.  Slice peppers and onion. Add all vegetables and stir-fry until crisp-tender (about 3 minutes); add beef.

Combine reserved marinade, broth and cornstarch; pour over stir fried vegetables and beef and simmer until thickened.  Add tomato wedges and heat through. Serve with rice.
