My front garden

Christmas 2024

The moon reflecting on the calm, clear, water; the lights of Norris Arm twinkling in the background; the stillness and quiet of the night, creating a piece of Paradise.   It was beautiful and so peaceful!  I was in awe as I sat in silence and looked out over the river.  It was one special evening last week and it was magical.  It was a time to reminisce and it was a time to be in the present. My thoughts were of Dave and memories of long ago, of family and friends – the most wonderful gifts in my life.  And so began my Christmas card to you.

In My Eyes

YOU are the Best Kind
of Gift

Every step we take makes a footprint
that tells our story and makes
it matter that we were here.

I believe it is up to each one of us
to weave our lives like tapestries,
making sure that every minute
holds a thread of importance,
allowing every day to evolve
into a new pattern which is laced
with meaning and purpose and love

And then to see every person
as the best kind of gift
~ oh, now that is when we have woven the most beautiful work of art.

Wishing You …

laughter in each and every day
the special joys of family
and
the warmth of friendship

I hope you have
a WONDERFUL Christmas
and
may the coming year
be one of health, happiness and adventure

This Year's Recipe

Bacon Wrapped Pork Tenderloin (Christmas 2024)

Ingredients

1 pork tenderloin (1.5 lbs)
8 slices bacon

Rub
1/2 cup brown sugar (packed)
2 tbsp mustard
1 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp black pepper
1/4 tsp salt

Directions

Preheat the oven to 375°. Line a baking sheet with foil and place a rack on top.
In a small bowl, mix the ingredients for the rub and rub it over the tenderloin.  Be sure all sides are well coated.   Cut bacon in 2″ pieces (approx) and cover the roast (top and sides).  Attach each piece with toothpick.

Place on rack and bake for about 45 minutes or until meat reaches 145°.  Remove from oven and allow it to rest for 5 to 10 minutes before slicing.  Serve hot with your choice of vegetables.  My sister chose baked potatoes, steamed broccoli, sauteed onions and stuffed mushrooms.  It was the PERFECT combination.

Tip:   The original recipe said to wrap the tenderloin in the strips of bacon but it didn’t crisp up so I tried using small pieces.  It worked perfectly.
