Merry Christmas from Sandy Point

The moon reflecting on the calm, clear, water; the lights of Norris Arm twinkling in the background; the stillness and quiet of the night – all coming together to create a piece of Paradise.   It was beautiful and so peaceful!  It was magical really.  All I could do was sit in silence and just breathe.  It was one evening last week and it was magical.

“Oh if I could give you just one gift this Christmas it would be the peace and tranquility of the river.”

This Year's Recipe

Bacon Wrapped Pork Tenderloin (Christmas 2024)

Ingredients

1 pork tenderloin (1.5 lbs)
8 slices bacon

Rub
1/2 cup brown sugar (packed)
2 tbsp mustard
1 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp black pepper
1/4 tsp salt

Directions

Preheat the oven to 375°. Line a baking sheet with foil and place a rack on top.
In a small bowl, mix the ingredients for the rub and rub it over the tenderloin.  Be sure all sides are well coated.   Cut bacon in 2″ pieces (approx) and cover the roast (top and sides).  Attach each piece with toothpick. 

Place on rack and bake for about 45 minutes or until meat reaches 145°.  Remove from oven and allow it to rest for 5 to 10 minutes before slicing.  Serve hot with your choice of vegetables.  My sister chose baked potatoes, steamed broccoli, sauteed onions and stuffed mushrooms.  It was the PERFECT combination.

Tip:   The original recipe said to wrap the tenderloin in the strips of bacon but it didn’t crisp up so I tried using small pieces.  It worked perfectly.
