Letitia Christmas 2025

Hello Letitia, I do hope that knee continues to heal and quickly.  Before you know it, you’ll be walking around with ease. It’s amazing what they can do these days … when they finally fit you in to the schedule 🙂

And here it is Christmas again. How thoughtful of you to send along a gift and card last evening.  Thank you!  You always go above and beyond.  It has been such a pleasure working with you over the past couple of years.

Is the holiday a big deal in your family?  It is in ours.  So much to do and the best of it is the preparations, making Christmas cards, baking and and.  Always such fun.  Best time of year, actually!

How I love making special cards for the special people in my life.  These electronic cards are not quite a nice as the paper kind but it’s still such a pleasure. 

We are always forging new paths, making new friends and creating new traditions while we cherish each memory of days gone by.

Life changes as the
years come and go –
that’s natural and
the way it should be.
But let’s take care

This Year's Recipe

Turkey and Dressing Casserole (Christmas 2025)

Ingredients

1 1/4 cups cubed cooked turkey
1/4 cup onion (chopped)
1/4 cup celery (chopped)
1/4 cup salad dressing
1 egg (beaten)
3/4 cup milk
1 can cream of mushroom soup
1/2 cup shredded cheese

Dressing
2 cups bread crumbs
1 tsp savoury
1/2 tsp pepper
1/2 cup chicken broth
1/4 cup melted butter

Directions

Make dressing and divide in half. Spread 1/2 of dressing on bottom of casserole dish (9x9x2). Combine turkey, onion, celery and salad dressing. Spoon over dressing. Top with remaining dressing.

Combine egg and milk mixing well and pour over the casserole. Refrigerate for about 2 hour. Pour soup over casserole and bake at 325 for 30 minutes. Sprinkle cheese on top and return to the oven until melted.

TIP:  This is a great way to use leftover turkey.  Other times, I substitute chicken or fish.
