Keith and Family Christmas 2025

Hello Keith and Sabrina  I am trying to visualize what Christmas is like for you out west.  I am guessing you carry on many of the family traditions from both sides.  Must be different now that Karen has moved.  I do hope you will all get a chance to be together at some point over the holiday

Life in Sandy Point is plugging along – like living a fantasy most days. Always such fun!  And here it is Christmas again.  So much to do and the best of it is the preparations, making Christmas cards, baking and and.  Best time of year!  I will be in Gander for Christmas – longer if the weather is bad … extra underwear packed just in case.lol

How I love making special cards for the special people in my life.  These electronic cards are not quite a nice as the paper kind but it’s still such a pleasure. 

We are always forging new paths and creating new traditions while we cherish each memory of days gone by.

Life changes as the
years come and go –
that’s natural and
the way it should be.
But let’s take care
that the heart and
meaning of
Christmas
remain the same.

This Year's Recipe

Turkey and Dressing Casserole (Christmas 2025)

Ingredients

1 1/4 cups cubed cooked turkey
1/4 cup onion (chopped)
1/4 cup celery (chopped)
1/4 cup salad dressing
1 egg (beaten)
3/4 cup milk
1 can cream of mushroom soup
1/2 cup shredded cheese

Dressing
2 cups bread crumbs
1 tsp savoury
1/2 tsp pepper
1/2 cup chicken broth
1/4 cup melted butter

Directions

Make dressing and divide in half. Spread 1/2 of dressing on bottom of casserole dish (9x9x2). Combine turkey, onion, celery and salad dressing. Spoon over dressing. Top with remaining dressing.

Combine egg and milk mixing well and pour over the casserole. Refrigerate for about 2 hour. Pour soup over casserole and bake at 325 for 30 minutes. Sprinkle cheese on top and return to the oven until melted.

TIP:  This is a great way to use leftover turkey.  Other times, I substitute chicken or fish.
