These are basic sauces used in almost all Asian style stir fry recipes, as well as seasoning mixes for Velveting meats such as beef and pork. Honestly, you can’t really go wrong with any of the recipes. All the chefs use the basics and just add a twist or two to make it their specialty or to ramp it up a notch. If you don’t have an ingredients, just leave it out or substitute with the next best thing.
Seasonings and Rubs
Basic Brown Sauce
1 tbsp Shaoxing wine
1/2 cup soy sauce
1 tbsp oyster sauce
1 tsp Hoisin sauce
1 tsp seasome oil
1 tsp ketchup
1/2 tsp sugar
2 to 4 tbsp chicken stock
1 clove garlic chopped
1 slice ginger minced
IF you want a kick to it, add:
3 dried red chili peppers OR
1 tsp hot crushed chili peppers
Slurry
2 tsp cornstarch
1 tbsp cold water
TIP: Increase the amount of chicken stock to suit the amount of liquid you want for the recipe.
Chow Mein Sauce
Ingredients:
1/8 tsp ginger
2 tbsp soy sauce
2 tbsp oyster sauce
2 tbsp sesame oil
1 tbsp white sugar
½ cup chicken stock
1 tbsp corn starch
¼ cup water
Directions
Mix ingredients for the sauce. Dissolve corn starch in water and add to the sauce. Add sauce to the recipe. Mix well, heat through to thicken.
Stir Fry Sauce
2 tbsp Oyster sauce
3 tbsp soy sauce
1/2 cup beef or chicken stock
1 tbsp Shaoxing wine
1 tbsp brown sugar
1 clove garlic chopped
1 slice ginger minced
Slurry:
2 tsp corn starch
1 tbsp cold water
Directions
Mix ingredients for the sauce. Dissolve corn starch in water and add to the sauce. Add sauce to the recipe. Mix well, heat through to thicken

Velveting Meats
Velveting tenderizes the meat and gives it that restaurant, take-out, texture.
2 tsp corn starch
3/4 tsp baking soda
1/2 tsp salt
1/4 tsp pepper
1 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp Shaoxing wine
1 egg white (optional)
Add ingredients directly to bowl of meat (slivered); mix thoroughly and work it through with your hand to ensure every piece is coated. Refrigerate a minimum of 30 minutes. (You can refrigerate overnight in readiness for cooking the next day)
