Try something different … Jamaican flavours make this recipe unique and it doesn’t take all that long to prepare
Jamaican Pigeon Peas and Rice
1 cup long grain rice
2 cups boiling water
1 tsp salt
1 cup pigeon peas
2 cups water
2 tsp chicken bouillon
pinch salt and pepper (to taste)
1 cup coconut milk
1/2 cup corn
1/2 cup chopped onion
1/2 cup chopped bell peppers
1 tbsp Jamaican Jerk Seasoning
Directions:
Rice:
Bring water to a boil, add salt and rice and cook. If using stovetop, bring to a boil and simmer for approximately 10 to 12 minutes. Drain, rinse and fluff. (For microwave, cook in covered container on high for 4 minutes; reduce to 50% power and allow to simmer 5 minutes. Fluff with a fork. Let stand 5 minutes. Using cold water, rinse and drain rice a couple of times).
Pigeon Peas Mixture:
Rinse peas and pour in saucepan with 2 cups boiling water. Add chicken bouillon. Bring to a boil, lower heat and simmer about 20 minutes (until peas are tender but not overcooked). Add onions, corn, peppers, coconut milk and seasonings. Simmer approximately 10 minutes. Serve hot over reheated rice
NOTE: Jamaican Seasoning is usually available at Walmart, the Bulk Barn or on Amazon. The recipe is below if you prefer to make your own from scratch.
This dish is a bit spicy. If you prefer and milder flavour, reduce the amount of Jamaican seasoning to taste.
Jamaican Jerk Seasoning
Ingredients
1 tbsp onion powder
1 tbsp garlic powder
2 tsp cayenne pepper
2 tsp smoked paprika
2 tsp allspice
1 tsp ground cloves
1 tsp ground ginger
1 tsp black pepper
1 tsp salt
1/2 tsp red pepper flakes
2 tsp thyme
2 tbsp brown sugar
1 tsp cinnamon
Directions
Mix all ingredients and store in covered jar. (Make it ahead of time and always have on hand ready for use as needed. lt can be stored in air-tight bottle for several months.)
