Shortbread
Shortbread is so easy to make and usually a favourite among young and old alike. Make a batch and freeze them in readiness for unexpected company. But, the trick is to forget you have them on hand> Otherwise, you’ll be nipping into the stash every chance you get.
Ingredients:
1 cup butter
½ cup corn starch
½ cup icing sugar
1 ½ cups flour
1/2 tsp almond flavouring
Directions:
Cream butter; gradually add corn starch and icing sugar and beat well. Add flour and flavouring, mixing well. Divide batter into 3 portions. With each portion, flatten batter gently and then use rolling pin to roll out. Cut with cookie cutter. Place 1” apart on parchment paper on cookie sheet. Bake at 300° for 20 – 25 minutes.
TIP: If can omit the corn starch if you want. The cookie batter will be softer and easier for use with a cookie press. When I do that, I increase the temperature to 350° and bake for 8 to 9 minutes.
