Banana Bread

What to do with those overripe bananas – make banana bread, of course.  Quite often, my son, will have a bunch of bananas tucked away in the freezer in the hopes I’ll get the urge to make up a bread when I drop by.  The beauty is that there’s not a lot of work or fuss involved. Put all the ingredients in a large measure cup and mix with a fork.  Seriously, can it get any easier than that!  

Banana Bread

Ingredients:
2-3 mashed bananas
2 egg (beaten)
1/4 cup milk
3 tbsp cooking oil
1 tsp vanilla
1/2 cup white sugar
1/2 cup brown sugar
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 cups flour
1/2 cup chopped walnuts (optional)

Directions:

Preheat over to 350°. Line a large loaf pan with parchment paper.  

Using a mixing bowl or large measuring cup, mash the bananas and add the eggs. Beat by hand (I just use a fork for beating and mixing).  Add milk, oil and vanilla and beat. Add sugar and mix it through. Add salt, baking powder, soda and flour.  Mix it through making sure everything is incorporated. It may be a bit lumpy but that’s just fine.  Be careful not to over mix.   If using walnuts, stir them through now.  

Pour the mixture into the loaf pan and bake for approximately 50 minutes.
