Berry Cake
Ingredients
Dry Ingredients
1 cup sugar
2 cups flour
2 tsp baking soda
2 cups berries (partridge or blue berries)
Liquid Ingredients
2 eggs
1 cup sour cream
½ cup melted margarine
1 tsp vanilla
Cinnamon Sugar
2 tbsp cinnamon
2 tbsp white sugar
Directions
Mix dry ingredients (except berries); add liquids and blend. Add berries. Pour mixture into 9″ cake pan lined with parchment paper (or use tube or spring pan). Sprinkle cinnamon sugar over top of cake. Bake at 350⁰ approx 1 hour. Serve with old fashion Brown Sugar Sauce
TIP: I always substitute sour cream for 1 cup homemade buttermilk (1 cup milk; 2 tsp white vinegar and let it ferment/thicken for about 10 to 15 minutes
Brown Sugar Sauce
¼ cup brown sugar
1 tbsp custard powder
1 cup boiling water
2 tbsp margarine
1 tsp vanilla
Combine sugar and custard powder; add boiling water, margarine and vanilla. Boil until thickened. Serve hot over Berry Cake
