These blueberry squares make me thing of Christmas Cookie Baskets that I always received from one of my friends. They are absolutely delicious.
Blueberry Squares
Creamed Mixture:
3 tbsp margarine
1/3 cups sugar
2 egg yolks
1/4 tsp vanilla
1/4 cup milk
Dry Ingredients
2/3 cups flour
1 tsp baking powder
1/4 tsp salt
Topping
2 egg whites
6 tbsp sugar
½ tsp salt
1 cup berries
Directions:
Cream margarine and sugar; beat in yolks; add dry ingredients with milk and vanilla. Bake at 350∘ for approx 20 minutes. Remove from the oven, spread berries over hot base and top with meringue (see below). Back in the over until golden (about 12 minutes).
Meringue Topping: Beat egg whites until fluffy and forming soft peaks, add sugar and salt until stiff. Spread over berries. Bake at 350° until golden
