A special card for you this Christmas, Brittany. Actually, I made a paper one which is en route to Bay Roberts by Tom and Joanne.  But with your flights all tangled up and the delays getting home, I am sending you an electronic one too.  You see, this year I decided to do electronic ones for everyone living away.  It was a BIG decision for me for I love designing and making cards, going through my Christmas list, addressing the envelopes ~ even bringing them to the Post Office.  I was disappointed until I started to make this  … it was so much fun. I hope you like it. 

And, of course, I am including a recipe as always (at bottom of page).  Not sure if both of you do the baking, but whomever it is, you should really give this one a try.   I tried it out and it was SOOOO easy and delicious. 

I’m guessing this Christmas will be one for the books … you and Robyn will be telling stories about it through to old age.  Thank goodness you are both together – that’s the main thing.  I have a feeling that, despite the hassle and the troubles, you’ve both found things to laugh about and enjoy.  Now I’m hoping there’s no more interruptions or inconveniences in travel and that you get to see your families in Newfoundland.  Have a wonderful time!

Curried Chicken Puffs (Christmas 2022)

1/2 cup water
1/3 cup margarine
2/3 cup flour
Dash salt
1 8oz pk cream cheese
1/4 cup milk
1/4 teaspoon salt
1/8 tsp curry powder
Dash pepper
1 1/2 cup cooked chicken
2 tbsp green onions
1/3 cup slivered almonds (optional)

Bring water and margarine to boil; add flour and salt; stir vigorously over low heat until mixture forms ball. Remove from heat, add eggs, one at a time, beating until smooth after each addition (I use hand mixer for this part). Place level tablespoon of batter (I use a cookie scoop) on ungreased cookie sheet. Bake at 400 ̊ for 25 minutes. Cool

Combine cheese, milk, salt, curry and pepper mixing until well blended. Add chicken, almonds and onions; mix lightly. Cut tops from cream puffs, fill with mixture. Replace tops. Bake at 375 for 5 minutes (until warm. Makes 1 ½ dozen.

TIP: Unfilled puffs can be prepared in advance and frozen. Puffs can also be used as a pastry with whipped cream or preserves as filling. Dust top with icing sugar
