I wonder which cookie is the most popular with children, chocolate chip or brownies? I have a feeling there might be a tie on that. This recipe is basic and so easy and it makes the BEST brownies ever. The ingredients are all staples in our home so no unnecessary purchases AND because it’s a ‘from scratch’ recipe, there are no preservatives
Brownies
Ingredients
½ cup margarine (melted)
1 cup sugar
1 tsp vanilla
2 eggs
1/2 cup flour
1/3 cup oatmeal
1/3 cup cocoa
¼ tsp baking powder
¼ tap salt
½ cup chopped walnuts (opt)
Directions:
Mix butter, sugar, and vanilla (beat well); add eggs one at a time, beating well after each one. Add remaining ingredients and mix well. Spread in 8x8x2 inch lined pan. Bake at 350⁰ approx. 20 to 25 minutes. Cool slightly and frost (see recipe below).
TIP: You don’t need a mixer for this. I just use a bowl and a fork.
Chocolate Frosting
Ingredients
1/2 cup white sugar
2 tbsp cocoa
pinch salt
1/4 cup milk
2 tbsp margarine
1 tbsp corn syrup
3/4 cup icing sugar
1/2 tsp vanilla
Directions:
Add first 3 ingredients in a 1 quart saucepan and stir. Add remaining ingredients (EXCEPT icing sugar and vanilla), mix. Heat to a boiling point (on medium heat), stirring frequently. Boil for 3 minutes, stirring occassionally. Remove from heat and allow to cool. Beat in the icing sugar and vanilla. Spread over the brownies and once completely cooled, cut into squares.
