Buns and Rolls

Plain Rolls

Use this recipe for dinner rolls, hot dog buns, or hamburger buns.

Ingredients
2 cups lukewarm water
2 tbsp sugar
1 tbsp yeast
2 tbsp cooking oil
1 tsp salt
1 egg (beaten)

4 to 5 cups flour

Directions:

Dissolve yeast in warm water in large bowl. Stir in milk, sugar, margarine, egg and salt. Add 1 cup of flour and beat until smooth.  Continue adding flour until the dough clings together and is easy to handle.  Turn onto lightly floured surface and kneed until smooth, satiny and no longer sticky (about 8 minutes).

Place in  lightly greased bowl, inverting to grease the top.  Cover and let rise until doubled (about 1 1/2 hours). 

Punch down and divide into pieces, making size and shape as desired.  Can be rolls or buns – whatever you prefer.  Place on parchment covered cookie sheets. Cover and let rise 30 to 45 minutes.

Bake at 350° 20 to 25 minutes.  remove from pans and cool on wire racks

Cinnamon Rolls

Ingredients
1/4 cup warm water
1 tbsp instant yeast
1/4 cup sugar
1/4 cup milk (scalded and cooled to lukewarm)
1/4 cup margarine
1 tsp salt
1 eggs (beaten)
2 to 3 cups flour

Cinnamon Filling
1/4 cup sugar
1/4 cup melted margarine
1 tbsp cinnamon

Thin Sugar Frosting
1 tbsp + 2 tsp light cream (or milk)
1 cup icing sugar
(stir until smooth)

Directions:
Dissolve yeast in warm water in large bowl. Stir in milk, sugar, margarine, egg and salt. Add 1 cup of flour and beat until smooth.  Continue adding flour until the dough clings together and is easy to handle.  Turn onto lightly floured surface and kneed until smooth, satiny and no longer sticky (about 8 minutes).

Place in  lightly greased bowl, inverting to grease the top.  Cover and let rise until doubled (about 1 1/2 hours).  Punch the dough down. Roll into 15×9″ rectangle. Mix the cinnamon filling in small bowl and spread on the rectangle. Roll lengthwise as for a jelly roll; pinch edge or roll to seal tightly.  Cut in 1 1/2″ slices. Place, cut side down, in 2 well greased (or line with parchment paper) 9x9x2″ pan. Cover and let rise until doubled (about 40 minutes). Bake at 375° for 25 to 30 minutes. Drizzle sugar frosting over top and remove buns to wire racks.
