This toffee makes a perfect gift – Christmas or just because. I usually make a batch and freeze it in ‘give-away’ bags.
Chocolate Almond Toffee
Ingredients:
1 cup butter
1 cup white sugar
3 tbsp water
1 tbsp corn syrup
½ cup almond (chopped & toasted)
4 oz milk chocolate (melted)
½ cup almonds crumbs
Directions:
In medium saucepan, melt butter and add sugar. Stir until dissolved. Add water and corn syrup and cook over medium heat until golden brown and at the soft cracked stage (takes about 12 minutes after boiling starts).
Remove from heat; stir in almonds and quickly pour over 9 x 14 well greased baking sheet (thin layer). Quickly spread melted chocolate on top and sprinkle with almond crumbs. Cool and break apart.
Toast chopped almonds: Preheat oven to 350. Chop almonds into small pieces. Spread single layer on cookie sheet. Toast in oven for 5 minutes (I use toaster oven)
