It seems like every recipe is a favourite for me but this one tops them all. They are called Chocolate Chip Squares. My friend, Ghislaine, makes them every year. This is her recipe.
Chocolate Chip Squares
Bottom – Step 1:
1/3 cup margarine
1/4 cup white sugar
1/4 cup brown sugar
2 egg yolks
Bottom – Step 2:
1 cup flour
½ tsp baking powder
½ tsp salt
Topping:
1 cup chocolate chips
1 cup brown sugar
2 egg whites
1 cup short coconut
Directions:
Cream all ingredients in Step 1; add ingredients for Step 2 and cream. Press into 9″ square pan. Spread layer of chocolate chips over bottom (amount depends on personal taste). Top with meringue.
Meringue Topping: Beat egg whites until fluffy; add sugar. Fold in coconut.
Bake at 350 for 25-30 minutes
