Claudine and Ed Christmas 2025

I do hope this finds you well.  Ed I hear you have had your challenges over the past year.  Are you doing okay now?  I certainly hope so.  And, Claudine, I just know you’ve been by his side and his support through it all.  Did he give you quite a scare?  I am imagining your nerves were shot for a while. Take care of each other.

This year has also brought you another little girl – a great grandchild. Holy Crow!  How wonderful is that. Congratulations!  Your family is growing.  BUT isn’t it about time to have a little boy come on the scene. (You should put in an order. lol)

Life in Sandy Point is plugging along. Over the year I’ve been doing a bit of writing, gardening, building stuff and the like.  Always such fun and, of course, I go back a forth to Gander as I please. How good is that!  And here it is Christmas again.  So much to do and the best of it is the preparations, making Christmas cards, baking and and.  Best time of year! 

How I love making special cards for the special people in my life.  These electronic cards are not quite a nice as the paper kind but it’s still such a pleasure for you remain in my thoughts and in my heart as lifelong friends. 

We are always forging new paths and creating new traditions while we cherish each memory of days gone by – like our years spent as neighbours on Jacobs Place.

Life changes as the

It is tradition to include a recipe with my cards.

This Year's Recipe

Turkey and Dressing Casserole (Christmas 2025)

Ingredients

1 1/4 cups cubed cooked turkey
1/4 cup onion (chopped)
1/4 cup celery (chopped)
1/4 cup salad dressing
1 egg (beaten)
3/4 cup milk
1 can cream of mushroom soup
1/2 cup shredded cheese

Dressing
2 cups bread crumbs
1 tsp savoury
1/2 tsp pepper
1/2 cup chicken broth
1/4 cup melted butter

Directions

Make dressing and divide in half. Spread 1/2 of dressing on bottom of casserole dish (9x9x2). Combine turkey, onion, celery and salad dressing. Spoon over dressing. Top with remaining dressing.

Combine egg and milk mixing well and pour over the casserole. Refrigerate for about 2 hour. Pour soup over casserole and bake at 325 for 30 minutes. Sprinkle cheese on top and return to the oven until melted.

TIP:  This is a great way to use leftover turkey.  Other times, I substitute chicken or fish.
