Growing up, there was always some sort of quick bread or coffee cake on hand for afternoon tea – always ready for the unexpected visitor. This Date and Nut Bread was one of my favourites – crunchy and delicious.
Date and Nut Bread
Ingredients:
Fruit Mixture
1 cup chopped dates
1 tsp baking soda
3/4 cups boiling water
Bread Mixture
1 egg
3/4 cup brown sugar
1/4 cup melted margarine
1 tsp salt
1 tsp vanilla
1 ½ cups flour
1 tsp baking powder
3/4 cups chopped nuts
Directions:
Preheat over to 320°. Line 2 small OR 1 large loaf pan with parchment paper.
In a small bowl, added boiling water, baking soad and chopped dates. Set aside to cool.
In a larger bowl and using a hand mixer, beat egg until light and fluffy. Add brown sugar gradually and then add the melted margarine. Beat well. Add salt, vanilla, and cooled date mixture and mix through. Add baking powder and flour and mix until everything is well incorporated. Do not over mix. Add nuts.
Pour into loaf pan(s) and bake for approximately 1 to 1 1/2 hours (it will depend on the size of the pans)
