A special card for you this Christmas – this year I decided to do an electronic one. It was a BIG decision for me for I love designing and making cards, going through my Christmas list, addressing the envelopes ~ even bringing them to the Post Office. I was disappointed until I started to make this … it was so much fun. I hope you like it.
And, of course, I am including a recipe as always (at bottom of page). Renee, If you haven’t already made cream puffs, I think you’ll love this recipe. Doug, you can give it a try, too, but why am I thinking you would much rather just sample the end result:) I tried it – both to make and eat – SOOOO easy to make; so delicious to taste.
Christmas morning in Bonavista – now that is wonderful I bet. And then Christmas again on the 27th. I hope you have an absolutely fantastic holiday with family and friends – in Bonavista and in Central. Be sure to pop over for a visit when you come out to Sandy Point. I’m in Gander until suppertime Boxing Day and then home for the rest of the week.
Merry Christmas
Doug, Renee, Grace, Claire and Eve
I wish you a Christmas
filled with
Hugs, Laughter, Smiles and Warmth
And, may the coming year
bring you
blessings beyond measure.
Curried Chicken Puffs (Christmas 2022)
1/2 cup water
1/3 cup margarine
2/3 cup flour
Dash salt
1 8oz pk cream cheese
1/4 cup milk
1/4 teaspoon salt
1/8 tsp curry powder
Dash pepper
1 1/2 cup cooked chicken
2 tbsp green onions
1/3 cup slivered almonds (optional)
Bring water and margarine to boil; add flour and salt; stir vigorously over low heat until mixture forms ball. Remove from heat, add eggs, one at a time, beating until smooth after each addition (I use hand mixer for this part). Place level tablespoon of batter (I use a cookie scoop) on ungreased cookie sheet. Bake at 400 ̊ for 25 minutes. Cool
Combine cheese, milk, salt, curry and pepper mixing until well blended. Add chicken, almonds and onions; mix lightly. Cut tops from cream puffs, fill with mixture. Replace tops. Bake at 375 for 5 minutes (until warm. Makes 1 ½ dozen.
TIP: Unfilled puffs can be prepared in advance and frozen. Puffs can also be used as a pastry with whipped cream or preserves as filling. Dust top with icing sugar
