Happy New Year to the Hasnains

The moon reflecting on the calm, clear, water; the lights of Norris Arm twinkling in the background; the stillness and quiet of the night – all coming together to create a piece of Paradise.   It was beautiful and so peaceful!  It was magical really.  All I could do was sit in silence and just breathe.  It was one evening last week and it was magical.

I was so happy to speak with you yesterday and to hear all the wonderful things that are happening in your lives – Mahnoor doing well and visiting for the Holidays, your new home construction well underway, Noubahar’s promotion and her upcoming June wedding.  Oh my goodness – you have been blessed.

This Year's Recipe

Peanut Butter Chocolate Fudge (Christmas 2024)

Ingredients

1 cup chocolate chips
1 1/2 cups crunchy peanut butter
3/4 cup corn syrup

Directions

Line a 8×8″ pan with parchment paper.  Add all ingredients in a large (4 cup) glass measuring cup or bowl.  Melt on high in microwave.  It takes about 2 minutes in a high powered microwave; 3 minutes in a smaller one.  Stir until everything is smooth – with the exception of the peanut pieces of course.  

Pour into pan and place in fridge for about 6 hours. Cut into squares. 

NOTE:  If you use smooth peanut butter, reduce the amount to 1 cup.  Everything else remains the same

TIP:  The fudge is best kept in fridge until it’s ready to be shared / eaten.
