A special card for you this Christmas – this year I decided to do an electronic one. It was a BIG decision for me for I love designing and making cards, going through my Christmas list, addressing the envelopes ~ even bringing them to the Post Office. But the time has come! I hope you won’t be too disappointed. The design and creation are still part of the process and the Christmas list is still right beside me as I make this one especially for you. And, of course, I am including a recipe as always.

I think of the two of you so often and do hope you are doing well. I’m not on Facebook much, Lynn, but every now and then I will see a photo of your beautiful cabin. You must love it. There’s nothing like a place to get away. I bet you are kicking yourself for not having done this years ago but the main thing is you have it now. Enjoy every single minute!
I never tire of our little spot in Sandy Point … it’s like a little gingerbread house plopped by the side of the river and I’m only 40 minutes away from David and the children. It is wonderful! Kaitlyn (the oldest) is in first year university this year, Nic, the middle child, is in Grade 10 and studying onlne. Megan who is 11 now is in Grade 6. She LOVES hockey and is a little live wire.
Curried Chicken Puffs (Christmas 2022)
1/2 cup water
1/3 cup margarine
2/3 cup flour
Dash salt
1 8oz pk cream cheese
1/4 cup milk
1/4 teaspoon salt
1/8 tsp curry powder
Dash pepper
1 1/2 cup cooked chicken
2 tbsp green onions
1/3 cup slivered almonds (optional)
Bring water and margarine to boil; add flour and salt; stir vigorously over low heat until mixture forms ball. Remove from heat, add eggs, one at a time, beating until smooth after each addition (I use hand mixer for this part). Place level tablespoonfuls of batter (I use a cookie scoop) on ungreased cookie sheet. Bake at 400 ̊ for 25 minutes. Cool
Combine cheese, milk, salt, curry and pepper mixing until well blended. Add chicken, almonds and onions; mix lightly. Cut tops from cream puffs, fill with mixture. Replace tops. Bake at 375 for 5 minutes (until warm. Makes 1 ½ dozen.
TIP: Unfilled puffs can be prepared in advance and frozen. Puffs can also be used as a pastry with whipped cream or preserves as filling. Dust top with icing sugar
