In our family, we just shake our heads in disbelief when we hear people talking about boxed pancake mix being so much more convenient. Really! Think about it. You still have to measure out the contents and add milk, egg and vanilla. The only additional ingredients for homemade is a bit of sugar, salt and baking powder.
Pancakes
Ingredients
1½ cups flour
3 tsp baking powder
3 tsp sugar
½ tsp salt
1 tbsp. cooking oil
1 egg (beaten)
1 1/4 cups milk
1 tsp vanilla
Directions:
Combine dry ingredients. Mix liquid ingredients and gradually add to dry mixture, mixing well. The batter does not have to be completely smooth. Using a 1/4 cup measure or better still, an ice cream scoup, pour batter into a medium hot frying pan greased with oil. Fry until golden, flip and repeat on the other side.
Serve with corn or pancake syrup. OR you can always make your own syrup. See recipe this page.
Pancake Syrup
Ingredients
1 cup berries (your choice)
1 cup water
1/3 cup sugar
Directions:
Combine berries, sugar and water and bring to a boil (medium-high heat). Reduce heat and simmer for about 5 (until juice is the texture you want).
TIPS: If this isn’t to your taste, you can add sugar to suit. If it isn’t thick enough, just dissove 1 tsp of Byrd’s Custard Powder in a tablespoon of water, add to the syrup and heat through to thicken.
