Raisin Oat Scones

This is a basic scone recipe that can be used with raisins or a variety of berries. It makes the perfect breakfast biscuit or can be used as a light dessert. 

Oat Scones

Ingredients

1½ cup flour
1½ cup uncooked oats
1/4 cup brown sugar
1/3 cup margarine
1 tbsp baking powder
1/4 tsp salt
1 6 oz pk raisons OR
1 cup of berries (your choice)
½ cup milk
1 egg (beaten)

Cinnamon Sugar
1 tsp sugar
1/2 tsp cinnamon

 Directions:

In medium bowl combine dry ingredients and use pastry blender to cut in margarine until coarse crumbs; stir in raisins (or berries), add milk and egg, mixing just until moistened.

Shape dough to form a ball. Turn out onto flour surface; knead gently 6 times. On greased cookie sheet (OR in a preheated cast iron skillet), pat out dough to form an 8″ circle. With sharp knife, lightly score round into 12 wedges; sprinkle with cinnamon sugar.  To use as a light dessert, top it with whipped cream and berries.

Bake at 375⁰ for 30 minutes or until very lightly browned. Break apart and serve warm.
