Rhubarb as a dessert – who would have thought. This recipe is absolutely delicious. Serve with cream or ice cream.
Rhubarb Custard Bars
Crust
1 cup flour
1/4 cup sugar
1/2 cup margarine or butter
Filling
2 eggs
1 cup sugar
1/4 cup flour
pinch salt
2 cups rhubarb (chopped)
Directions:
To make crust, crumble all ingredients and press into an 8×8 pan. Bake 12 to 15 minutes on 350° until lightly golden
Whisk eggs; add filling ingredients and mix well; fold in the chopped rhubarb. Pour the filling over the hot crust and bake for another 35 to 40 minutes. Cool completely, slice into bars and dust with icing sugar
Chill before serving. Top with cream or ice cream
