Snowballs

My top two recipes for snowballs. One is for when you need to make a huge batch to feed the masses. The other is more down to earth with simple ingredients. Both will look the same and both are soft and chewy. 

My Best Snowball Recipe

Ingredients

Hot Mixture
1½ cups white sugar
1/4 cup margarine
3 tbsp coca
½ cup milk

Cold Mixture
1 egg
2 cups coconut
2 cups rolled oats
1 tsp vanilla
Pinch salt

Coconut (about ½ cup for rolling)

Directions
Combine ingredients for the hot mixture. Bring to a boil (on medium) and boil for 3 to 4 minutes (maximum). Allow to cool 8 minutes. 

Beat the egg and slowly add to the cooled mixture, continuing to beat as you pour. Add remaining ingredients and mix well. 

Allow to cool and form in about 1″ balls and roll in coconut.  (I use a scoop for making snowballs – so much easier and quicker)

This is my favourite, go-to, recipe because I always have the ingredients on hand.

The following recipe came from SusieQ.  It’s her ‘go to’ and never fails.  If you’ve ever had to make a humongous batch of snowballs, this should definitely be your FIRST choice.  And, be sure to make TINY snowballs as they really need to be bite size. They are very filling.  Oops! I meant to say filled with calories.  Soooo good!

Snowballs for a Crowd

Dry Ingredeints
9 cups rolled oats
4 cups coconut
1 chocolate cake mix (double layer)
1 pkg chocolate pudding mix

2 to 3 cups coconut (for rolling)

Hot Mixture
1 cup margarine
2 cup sugar
2 cup milk

Directions

Mix dry ingredients in a large bowl and set aside.

In a large pot, bring margarine, sugar, and milk to a boil. Immediately remove from heat and add the dry ingredients.  Mix well. 

Allow it to cool. Form in about 3/4″ balls and roll in coconut. Makes about 11 1/2 dozen.

Tip:  Have a supply on hand.  Just make and freeze
