Getting it white is all about the ingredients.
White Cake
2 1/4 cups flour
1 2/3 cup sugar
2/3 cup shortening
1 1/4 cup milk
3 1/2 tsp baking powder
1 tsp salt
1 tsp vanilla
5 egg whites
Directions:
Grease and flour rectangular pan (13x9x2) or 2 round pans (8 or 9×1 12″). Preheat the oven to 350° F (175°C).
Place all ingredients (except egg white) into a large mixing bow and beat on low speed for 30 seconds, scraping bowl constantly. Beat on high speed for 2 minutes, scraping bowl occasionally. Beat in egg whites on high speed for 2 minutes, scaping bowls occasionally.
Pour into prepared pan and bake until wooden pick inserted in centre comes out clean (approx 40 – 45 minutes for rectangular pan; rounds 30-35 minutes) or until the cake springs back when touched in the centre. Allow cake to cool in pans for 5 minutes and then place on racks to cool completely. Frost as desired.
