This is cod au gratin with a twist – a one-dish meal that I love to make and love to eat.
Ingredients
1-2 lbs cod fillets
1 onion (chopped)
1 cup broccoli
tomato slices
mushrooms (optional)
buttered bread crumbs
½ cup grated cheese
White Sauce:
1/4 cup melted margarine
1/4 cup flour
½ tsp salt
1 tsp pepper
1 cup chicken stock
1 cup milk
1 tsp worcestershire sauce
dash of hot pepper sauce
1/2 tsp savoury
Directions
Place cod pieces in a greased casserole dish, cover with onions and vegetables. (Note: Sliced tomatoes can go in the casserole or be used as a side dish). Pour sauce over fish and sprinkle with bread crumbs. Cover with foil and bake at 325⁰ for approximately 45 minutes. Sprinkle cheese on top and return to oven until melted.
Sauce
In a medium saucepan (or LARGE microwave bowl), melt margarine, add flour and whisk to form a smooth paste; add remaining ingredients, stirring well. Simmer until thickened. (If using microwave, stir after every 30 seconds until it is the right consistency.)
