Carrots are a mainstay in our home. This glazed carrots recipe is another of my ‘go tos’.  It’s simple, quick and easy and can be served as a side dish with just about any menu you wish

Glazed Carrots

Ingredients

2 cups carrots 
1 tbsp margarine
1 tbsp brown sugar
1 tsp garlic
parsley (optional)

Directions

Cut carrots in discs or diagonally and cook until tender but still a bit crunchy (we don’t like our veggies overcooked).  Drain immediately and add margarine and brown sugar and garlic.  Toss. Use parsely to garnish.

I often use the microwave to cook the carrots.  Whether you use stovetop or microwave, it’s entirely up to you.  I just find that the microwave is faster and it’s one dish which does double duty as a serving dish as well.
