I don’t recall how I first came across this recipe but it sounded so good I had to try it. It was a hit with the family. Just a few tweaks … And some of you may be asking ‘why slow cooker?’ An air fryer is so much faster BUT in this case fast doesn’t get you the flavour and texture that the slow cooker does. I’ve tried both ways and, like my granddaughter says, “The air fryer wedges are good but not the same.
Slow Cooker Wedges with Cheese
Ingredients:
1 cup crispy bacon (optional)
2 medium onions diced
4 to 6 medium potatoes cut in wedges
2 cups cheddar cheese, shredded
salt and pepper (to taste)
green onions to garnish
Directions:
Fry about 1/2 pound of bacon strips until crispy. Using a paper towel, soak up any excess fat and cut the bacon into little pieces). NOTE: If you are a vegetarian, you can always leave out the bacon but, naturally, the flavour of the dish will be entirely different.
Cut potatoes into wedges (don’t peel). Start layering the ingredients (cheese first). Then layer potatoes, onions, bacon and cheese and keep going. I usually use 6 potatoes so there is enough for 3 layers in total. Season with salt and pepper. Top with shedded cheese and bacon. Cover and cook on low for approximately 6 hours (or on high for 3 hours). During the last hour, sprinkle green onions over top for garnish.
TIP: The first time I made this, the slow cooker was a MESS to clean up. I recommend you make sure the bottom and sides are well greased. Also, if you are expecting a crowd, just add a couple more potatoes.
