Beef and Broccoli

Beef and Broccoli Stir Fry

1/2 lb beef (slivered)
2 cups broccoli florets
1 tsp ginger (minced)
3 cloves garlic (chopped)
1 tsp salt
1/2 tsp ground pepper
2 tsp sesame oil
cooking oil (for wok)

Marinade (for velveting / tenderizing)
2 tsp corn starch
3/4 tsp baking soda
1/2 tsp salt
1 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp Shaoxing wine
1 egg white (optional)

Stir Fry Sauce:
2 tbsp Oyster sauce
3 tbsp soy sauce
1/2 cup beef or chicken stock
1 tbsp rice wine
1 tbsp brown sugar

Slurry:
2 tsp corn starch
1 tbsp cold water

Tip: Prepare everying before you begin stir fying.

Step 1:  Place beef slivers in a bowl along with the marinade ingredients.  If you don’t have the proper wine, substitute with sherry, bourbon or whiskey. Using your hands, work the marinade through beef slivers making sure every piece is well coated. Cover tightly and refrigerate 30 minutes to hour. (I left mine overnight)

Step 2:  In small bowl, combine all ingredients for the stir fry sauce and mix well. In another bowl, mix corn starch and water to make slurry. 

Step 3:  Place broccoli in bowl, add 1 tbsp water, cover and microwave on high for 2 minutes.  Drain well; pat dry and set aside.

Step 4:  Heat wok; add 1 tbsp cooking oil; add ginger and fry for 30 seconds; add garlic and fry for 30 seconds; add marinated beef and stir fry for 2 to 3 minutes until 80% done. Set aside in a bowl.  Add more oil and stir fry broccoli for 1 to 2 minutes until tender crisp.  Add stir fry sauce; add meat and stir fry 1 minute, mixing well.  Stir slurry again. Move beef and broccoli mixture to sides of wok and add slurry. Cook until thickened mixing and turning throughout.  Add sesame oil.

Makes approximately 4 servings.  Serve over plain rice.
