Sausage Potato Casserole

This is one of my sister’s ‘go to’ meals. You can make it ahead of time and bake it just before the meal. Great for Pot Lucks too

Sausage Potato Casserole

4 lg sausages (mild, medium or hot)
5 white potatoes
2 cups broccoli
6-8 fresh mushrooms

Sauce
1 can cream of mushroom soup
1 cup milk
1 onion (finely chopped)
2 cloves garlic (crushed)
1/3 cup parmesean cheese
parsley
pepper

Directions:

Fry (or air fry) sausages; cut in thick chunks; cool and set aside. Peel and cut potatoes in chunks; boil, drain and set aside. Cook broccoli until slightly tender. Cut mushrooms in chunks.. Put everything in a 9×9 casserole dish

Put all ingredients for the sauce in a bowl, mix well and pour over the casserole.

Place in refridgerator until you are ready to bake it.  Bake at 350° for 45 minutes.

TIP: If you don’t have fresh mushroom, just use canned.  

My sister uses 4 hard boiled eggs in her recipe but we weren’t fussy about the texture so we substituted with broccoli.
