Invented in 1860, this steak was a substitute for premium grade steak. High in protein and full of flavour, in the 20th century, it became a comfort food. Remember the old ‘TV Dinners’
Salisbury (Hamburger) Steak
1/2 lb ground beef
1/3 cup rolled oats
1/3 cup plain bread crumbs
1 egg (beaten)
2 tbsp ketchup
1 tbsp Worcestershire sauce
1 tsp dry mustard
1 tsp soy sauce
1/2 tsp ea salt and pepper
1/2 tsp ginger
1/2 tsp garlic
1/2 onion finely chopped
pinch cayenne pepper
2 tbsp margarine
Gravy
1/2 onion (chopped)
1 garlic (minced)
1/2 tsp ea of salt and pepper
1 tsp Whorcestershire sauce
1 cup sliced mushrooms
3 cups beef broth
1 tbsp ketchup
Slurry
2 tbsp water
2 tbsp corn starch
Directions:
Mix all ingredients (except margarine). Use a fork and your hands. Shape meat into oval patties about 3/4 inch thick. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.
Melt margarine in a frying pan and cook patties on medium heat, turning occassionally, until brown and cooked through (about 15 minutes). Remove from pan and set aside.
Gravy
In same pan, add margarine, onions and garlic; sautee. Add mushroom and cook until tender. Add Worcestershire sauce and ketchup. Add broth; mix slurry and add to gravy; stir. Place steaks on top of gravy, cover and continue cooking on medium heat until steaks are hot and gravy has thickened.
Serve with mashed potatoes and side vegetable of choice.
