Chow Mein

Chow Mein is one of those dishes that can be used as a side dish with any type of meal, Chinese or Canadian. It has that unique morish flavour. Use it with fried rice and egg rolls or serve it as a vegetable with a hot meal or on a cold plate.

Chow Mein

Ingredients:
Meat (optional)
1 lb meat slivered (chicken)
1 tbsp cooking oil
1 tsp soy sauce
1 tsp salt
 
Vegetables
1 cup cabbage
1 carrot julienned
1 chopped bell peppers
1 chopped onion
2 cloves garlic, minced
1/4 cup water
1 cup bean sprouts
1 can mushrooms (optional)
1 cup chopped celery (optional)
1 can water chestnuts (optional)
1 can bamboo shoots (optional)
 
Chow Mein Sauce
1/8 tsp ginger
2 tbsp soy sauce
2 tbsp oyster sauce
2 tbsp sesame oil
1 tbsp white sugar
½ cup chicken stock
 
1 tbsp corn starch
¼ cup water

Directions

Mix the ingredients for the sauce and set aside. 

Heat skillet or wok and add oil, meat soy sauce and salt.  Cook and set aside.  In same skillet or wok, add water, cabbage, carrots, peppers, onions and garlic and cook until crispy tender.  If using the optional vegetables (all or some, your choice), add them now and cook approximately 2  minutes.  Pour sauce over the mixture, mix well and heat through. 

Dissolve corn starch in 1/4 cup water and add to vegetables. Heat through to thicken
