Meatballs

If you are like me, you plan ahead with a weekly or even monthly menu.  That way I can budget sensibly and have the right things in the pantry when needed.  Meatballs are on that menu once every two or three weeks – served in a variety of different ways, of course. 

Make these for a pot luck, a Friday evening supper or for any day of the week for that matter. It’s one of my ‘go to’ recipes.  I usually make a big batch and freeze them in meal size packages.  Sometimes I’ll process them in bottles and store that way.  Perfect for a quick, ready-made, meal. 

Ingredients
1 lb ground beef
salt & pepper to taste
1 tbsp Worcestershire sauce
1 tsp mustard
½ tsp ginger
½ tsp garlic
1 minced onion
½ tsp Montreal steak spice
(or dash hot pepper sauce)
1 egg
½ cup rolled oats
1/4 cup milk

Directions:
Mix all ingredients for meatballs and roll into 1 to 1 ½ inch balls.  Place on parchment paper on a large cookie sheet and bake (uncovered) at 400⁰ for about 25 minutes. I usually bake the meatballs rather than frying.  It seems a lot less trouble and gives me time to prepare the sauce or do some other task.

To panfry: Cook over medium heat, turning occasionally (about 20 minutes)

Sweet and Sour Sauce

Ingredients:
3/4 cup brown sugar
1 tbsp cornstarch
1/4 cup white vinegar
1 cup catsup
1 cup water

Directions:
In a medium saucepan (or LARGE microwave bowl) combine sugar and cornstarch (mix together); add remaining ingredients and cook til thickened. Quite often I will make the sauce in the microwave – less trouble and mess. Just be careful it doesn’t boil over.

Add meatballs (see recipe on this page) to the sauce and heat through. Serve over plain rice.  

Waikiki Sauce

Ingredients:
1/2 cup brown sugar
1 tbsp cornstarch
1 can pineapple tidbits
1 cup pineapple juice
1/4 cup white vinegar
1 cup hot water
3 tsp soy sauce
1/3 cup green pepper

Directions:
In a medium saucepan (or LARGE microwave bowl) combine sugar and cornstarch (mix together); add remaining ingredients (except pepper and pineapple) and cook until thickened. Quite often I will make the sauce in the microwave – less trouble and mess. Just be careful it doesn’t boil over.

Add meatballs (see recipe on this page), pepper and pineapple to the sauce and heat through. Serve over plain rice.
