The favourite meals are most often the simplest. Can you remember coming home to find the most delicious supper waiting for you – meatloaf with mounds of creamy mashed potatoes and asparagus on the side? The meatloaf was packed with flavour and every mouthful just made you want more. Here is the recipe I use.
Meatloaf
Ingredients:
Meat Mixture
2 eggs (beaten)
1/3 cup milk
1 cup oats
1 onion chopped
2 tsp Italian seasoning
1 tsp salt
½ tsp pepper
1 clove garlic (minced)
1 tbsp prepared mustard
1 lb ground beef
Sauce
1 can tomato soup
¼ cup catsup
¼ cup water
½ cup chopped onion
1 tbsp brown sugar
1 tsp dry mustard
1 tsp vinegar
¼ tsp lemon juice
1 tsp Worcestershire sauce
Directions:
Combine ingredients for meat mixture. Do not overmix it as it will make the meat loaf to dense. Press into large loaf pan. (l usually line the pan with parchment paper.) In bowl or large measuring cup, combine ingredients for sauce, pour over meat loaf and bake at 350° for 1 hour and 15 minutes.
TIPS:
You can spice the meat up a bit by adding a dash of hot pepper sauce.
If you don’t have tomato soup on hand, increase catsup to 3/4 cup and water to 1/2 cup and eliminate the vinegar.
