Shepherd’s Pie

Don’t you just love it when you can make a one-meal dish.  This is another excellent recipe to feed your family when you want fast, convenient and cheap!  Shepherd’s Pie is another favourite for your list

Shepherd's Pie

Ingredients:
1 medium onion
1 tbsp vegetable oil
1/2 tsp parsley; garlic;
2 cups vegetables (diced carrots, corn, peas)
3 cups ground beef
1 tbsp prepared mustard
1 tsp Worcestershire sauce
1 tsp hot sauce
1/2 cup beef broth
1 tbsp corn starch
3 cups Irish potatoes (see recipe)
OR 3 cups regular creamed potatoes

Directions:
In large skillet, lightly brown onions in oil; add parsley, garlic, ground beef, Worcestershire sauce, hot sauce, salt and pepper. Fry until meat is cooked (about 10 minutes). Add vegetables and mix through. Dissolve corn starch in beef broth and add to skillet.  Heat through until it thickens.

Transfer to a casserole dish. Heap with the Irish or creamed potatoes and place under  broiler until potatoes are golden and crusty.  Serve hot.

TIP:  In this type of casserole, I always make Irish potatoes for the extra flavour.  It’s always a hit.
