Sweet and Sour Pork

Want to change things up a bit at the table tonight? This Sweet and Sour Pork dish is so tasty and so filling.  You can always make it the night before and reheat when you are ready to serve.

Sweet and Sour Pork

Ingredients

6 pork chops (or boneless pork lion)
1 tbsp cooking oil
Salt and Pepper
2 cup chicken broth
½ cup brown sugar
½ cup white vinegar
2 carrots (diagonally sliced)
1 cup cauliflower (optional)
1 cup broccoli (optional)
1 medium onion (sliced)
1 ea. red and green pepper
½ cup raisins

1 can oranges (drain)
½ cup reserved juice
3 tbsp soy sauce
3 tbsp cornstarch

Directions

Cut meat in bite size pieces.  Add cooking oil to large skillet or wok, and brown on both sides. Lightly season with salt and pepper. Add broth, sugar and vinegar. Cover and simmer 25 minutes. Add vegetables. Simmer until crisp (about 8 minutes).

Add raisins. Drain oranges, reserving juice. Dissolve cornstarch in soy sauce and juice. Add to mixture. Heat through until thickened. Add oranges and heat gently.

Serve with rice. (serves 8)
