Twice Baked Potato

You can add green onions and bacon or whatever you please to this recipe but I like to keep it simple and affordable.  The basic recipe is delicious just as it is. Serve as a side dish or just make it your main meal – You can’t go wrong.

Twice Baked Potato

4 large baking potatoes
1 cup shredded Cheddar cheese, divided
½ cup milk
4 tablespoons butter
½ teaspoon salt
½ teaspoon ground black pepper
½ tsp onion powder
½ tsp garlic powder

Directions:

Bake potatoes in the preheated oven 400°F (200°C) until tender, about 45 to 50 minutes. Set potatoes aside until cool enough to handle.

Slice potatoes in half lengthwise; scoop flesh into a large bowl. Reserve skins.  Mash potatoes; add butter, 1/2 the cheese, milk and seasonings. Mix well.

Spoon potato mixture into reserved potato skins; top with remaining ½ cup cheese. Place in 350°F oven for 15 minutes. Serve immediately or place on a plate, cover with foil and refrigerate until ready to use.

Reheat by baking the potatoes in a preheated 350°F (175°C) oven for 15 to 20 minutes or in the microwave (covered with a damp paper towel) for 2 to 3 minutes.

TIP:  If I am in a hurry, I’ll cook the potatoes in the microwave.  Cool and continue with the directions noted above.
