Chicken a la King
Ingredients
Meat and Vegetable Mixture
2 cups cubed cooked chicken
½ cup onion (diced)
1/4 cup celery (diced)
1/4 cup carrot (diced)
1 cup frozen peas
1 cup kernel corn
2 oz jar sliced pimento
toast slices
Sauce:
1/4 cup melted margarine
1/4 cup flour
1 cup chicken broth
1 cup milk
Dash pepper; thyme
Directions:
Boil onion, celery and carrot in salted water (approx 8 minutes); add peas, corn, pimento and chicken. Boil for 2 minutes. Add sauce and heat through. Serve over toast with baked potato as side vegetable.
To make sauce, melt margarine and stir in flour until smooth paste. Add liquids and spices; mix well and boil til thickens.
